An unsatisfying dinner

Creating my first blog is a success, but tonight’s dinner is unsatisfactory.

My hubby and I decided to start eating “light meals” for dinner for almost 2 months now. Instead of eating the usual food like sinigang, tinola, menudo, and other heavy foods combined with rice, we substituted these foods with soups, pancit, and pasta dishes. Though pasta and pancit are considered heavy meals, for us these are lighter compared with rice combined with any viand. We are slowly getting used to it.

For tonight’s dinner, I cooked pancit and baked cupcake for dessert. The pancit I cooked wasn’t that satisfying. My stock of bihon in the pantry is not enough for the four of us (me, my husband, my cousin, and our helper). So i experimented by combining sotanghon and lomi noodles (the fat noodles) instead of bihon. Unfortunately, the result was unsatisfactory and my husband did not enjoy the dinner. The pancit tastes good, but the noodles were soggy and sticky.


For the dessert, I baked buttery cupcakes from Connie Veneracion’s recipe. I made 3 variations, plain, with chocolate chips, and marbled cupcake. According to my hubby, the cupcakes tasted good. But, different from the cupcakes I used to bake. The texture was different, it was similar to the muffins of Kenny Rogers. They were a little bit sweeter, so I’ll lessen the amount of sugar next time. Maybe half cup for every cup of flour. For me, the cupcake is fine. Hubby finished 1 1/2 cupcakes, so I can say he enjoyed the cupcakes a little bit… hehe.


So, the lesson is: don’t ever try to combine lomi and sotanghon for your pancit!… They’re not a good combination…;) I will surely make it up on him tomorrow.
