crepe ala bang

After attending the 6am mass last Sunday, Abeth and I went to the market to buy our one week supply. I am figuring out what to cook for breakfast. Since we wanted a light breakfast, I decided to cook pancakes. As I was looking at the box of the pancake premix (I used Magnolia with the chocolate syrup), I saw the recipe of the crepe. So instead of just cooking the pancakes, I tried the crepe. I asked Abeth to go back to the market to buy some “lakatan” bananas, because the recipe requires it. Buti na lang malapit lang yung market sa place namin, and besides Abeth enjoys going to the market hehehe. (I love you dy!) It tastes better for this kind of recipe compared with the “latundan” bananas I have in the fruit basket.

While waiting for the banana, I prepared the batter according to the package direction and cooked the crepe. When abeth arrived, I asked our helper to peel the bananas (around 5 bananas) and cut it into thin slices. To create the banana filling, I sauteed the banana with about 1 tbsp of butter and added 2 tbsp of brown sugar, and cooked it for 2 minutes. I arranged the crepe, banana filling, and crepe 3 times and topped it with the Kalamansi jam i bought recently from a trade fair. Then I poured the chocolate syrup. Take a look at the final product…..

Well, my husband loved it! Thanks for the premixes, hehe. I enjoyed the benefits of it. It’s hassle free! You can also try other fruit fillings for this recipe. I used mango jam for the left-overs.

Sean Andre Reyes…My life

On May 17, 2006, a very precious angel was born. His name is Sean Andre Reyes. Since then, he has been the apple of our eyes, making everybody happy with his lovely smile. Being a hands-on mom is not an easy thing to do, but I enjoy each and every moment of it. I am just lucky for having a home-based work that only requires me to come to the office twice a week. I can easily attend to all his needs.

Andre celebrated his first birthday last May 20, 2007. It was ecstatic! Everybody enjoyed it! It was also a thanksgiving day for us because a day before the celebration, Andre was hospitalized due to diarrhea. We have to rush him to the hospital because we thought he might be dehydrated. The doctor advised us to stay in the hospital until he restored his lost fluids. It was so painful seeing your child in a situation wherein the nurse is inserting the needle into his veins for the dextrose and found out that the fluid didn’t flow correctly. So, they have to reinsert it again on the other hand. It was so painful to see my child cry because I know how painful it was. But, they have to do it to avoid being dehydrated. We collected his stool sample for the lab test and thanked God for the good result, nothing to worry about. So we just stayed at the hospital to restore his lost fluids. The doctor allowed us to go home in the next day for the party. The party was great and very tiring! There were lots of foods especially desserts. (Buti na lng I baked early for the brownies and melted chocolates…hehehe).

Andre is now 1 yr and almost 2 months. Now, he have 4 front teeth (two in the upper and two in the lower). He can now stand alone, walk with a few steps, walk through the house by holding the chairs, walls, playpen, and anything he thinks that can help him. He enjoys eating his TAHO every morning, riding his bike and letting his yaya to push him around the neighborhood, and playing with our neighbors. He is such a wonderful kid. We enjoy every part of it.

Here’s a letter for you andre, I know you might read on this someday….

Andre, you are a wonderful gift from God. You are a lucky child, there are so many people around you who loves you. Please love them, too. We promise to take good care of you in the best way we can, until our last breath. We will do our best to provide all the things you need, not just the things you want. We will try to be the best parents for you. We pray to God for Him to guide you and watch over you in every thing you do. We pray that you grow as a God-fearing, loving, kind, intelligent, and responsible person. We wish you the all the best in life! We love you, son! Mwah!

Love,

Dad & Mom

An unsatisfying dinner

Creating my first blog is a success, but tonight’s dinner is unsatisfactory.

My hubby and I decided to start eating “light meals” for dinner for almost 2 months now. Instead of eating the usual food like sinigang, tinola, menudo, and other heavy foods combined with rice, we substituted these foods with soups, pancit, and pasta dishes. Though pasta and pancit are considered heavy meals, for us these are lighter compared with rice combined with any viand. We are slowly getting used to it.

For tonight’s dinner, I cooked pancit and baked cupcake for dessert. The pancit I cooked wasn’t that satisfying. My stock of bihon in the pantry is not enough for the four of us (me, my husband, my cousin, and our helper). So i experimented by combining sotanghon and lomi noodles (the fat noodles) instead of bihon. Unfortunately, the result was unsatisfactory and my husband did not enjoy the dinner. The pancit tastes good, but the noodles were soggy and sticky.

For the dessert, I baked buttery cupcakes from Connie Veneracion’s recipe. I made 3 variations, plain, with chocolate chips, and marbled cupcake. According to my hubby, the cupcakes tasted good. But, different from the cupcakes I used to bake. The texture was different, it was similar to the muffins of Kenny Rogers. They were a little bit sweeter, so I’ll lessen the amount of sugar next time. Maybe half cup for every cup of flour. For me, the cupcake is fine. Hubby finished 1 1/2 cupcakes, so I can say he enjoyed the cupcakes a little bit… hehe.

So, the lesson is: don’t ever try to combine lomi and sotanghon for your pancit!… They’re not a good combination…;) I will surely make it up on him tomorrow.

First timer

I’m a first time blogger. I have been visiting several blogs that inspired me to create my own. This blog will describe me as a wife, as a mom, and as a person. I will try to share the things that I learned….the recipes I tried…and maybe the adventures of being a first time mom. I am enjoying every second of it….from giving my husband a massage (seldom)…..to waking up in the middle of the night just to give my son his milk…to comforting him everytime he cries…to washing his bottom every time he “poopoo”….and so many things that a mom and a wife can offer to her husband and son.

I hope this blog can entertain you in some way…

I guess, that’s it for now!

Have a good day!
