Christmas Cookies

Believe it or not, the first cookies were made by accident. According to culinary historians, the first historic record of cookies was their use as test cakes. Before baking a large cake, a small amount of cake batter was used by cooks to test their oven temperature. These little test cakes were called “koekje”, which means “little cake” in Dutch.

I haven’t tried baking cookies so far. But, I love cookies, most especially chocolate chip cookies. Since Christmas is near, I will try baking some cookies to be given as gifts to our friends.

I will share a basic cookie recipe that you can easily turn into such a variety of easy to make Christmas treats.

Basic Cookie Dough Recipe

1/2 cup (or 1 stick) butter (or margarine) at room temperature
1/2 cup brown sugar, lightly packed
2 tablespoons sugar
1/2 teaspoon baking powder
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

In a large bowl, combine all the ingredients except the flour. Beat with an electric mixer, scraping the sides of the bowl several times, until the mixture is light and fluffy. With mixer at a low speed, add the flour gradually, beating just until everything is well blended.

Place the mixture on a baking sheet using a tablespoon measure and press down with a spoon to flatten a bit. Or roll our and cut into shapes with a cookie cutter. Bake at 350ºF for about 12 to 15 minutes, until golden.

You can vary this basic dough to make different Christmas cookie recipes. You can add chopped dried fruits like mango, dates, raisins, nuts, chocolate chips or bake them plain in holiday shapes and decorate with colored icing.

Andre’s 1st trick or treat

It was a fun day for us last Wednesday because Andre joined a Halloween Costume Contest that was held at SM Marilao with three different categories, which include scariest, most enchanting, and best superhero or cartoon character costume. It was Andre’s first time to join a contest. At first, we just intended to join Andre for the trick or treat at the mall to have some fun, but decided to join the contest later on when we learned about the contest. It was so sad that his dad won’t be able to see it because he needs to go to work. He just told me to take a lot of pictures.

I went to SM early in the morning to inquire about the contest and found out that there’s a registration. So, I registered Andre’s name under the scariest costume category. At first I am undecided where to include him, whether in scariest or superhero costume since he has his Incredibles costume already. Later on, we decided to come in his little devil costume wearing his Indredibles costume. I bought a black wing and a set of devil’s accessories.

I showed Abeth Andre’s costume for the contest thru webcam. Upon seeing Andre with his cute costume, he decided to leave the office and be back after the contest. He doesn’t want to miss this event…. hehehe.

We went there before 1pm for the scheduled contest. Wanting to see Andre with his cute costume, Abeth’s cousins and Lola also went to SM to watch the contest.

It started with a parade inside the mall. After that, we headed to the event center for the contest proper. There were too many contestants. Some are scary and some are cute. Of course Andre was one of the cutest hehehe. We’re glad that the scariest category was called first because there were really lots of contestants and Andre might get bored. But, I think he wasn’t bored because he kept on walking everywhere, sobrang kulit and likot talaga. We’re glad his yaya is so patient with him.

When, Andre’s number was called, he went to the stage, with his “stage mom” of course. Nakakatawa, kasi nauuna pa sya sa ibang contestants. Here are some videos of that….

We weren’t able to finish the contest because Abeth needs to go back to the office and we know that the contest will finish late. Besides, we only want to see Andre with his cute costume and for him to

experience this social event for kids. If only there’s a category for the cutest baby, baka manalo pa si Andre hehehe!

We really enjoyed the day and made us a proud mom and dad.
