Happy Christmas!

We spent our Christmas in our house in Cavite. We went there last Sunday and back in Bulacan early this morning. This year’s Christmas celebration is “dry” because it’s just me, Abeth, Andre, my parents, and my youngest sister. We miss celebrating this season with them. We used to have exchange gifts on Christmas Eve. Now, we just eat dinner and have our exchange gifts on the Christmas day since my parents can’t stay awake late at night. At saka we were so tired that day because we cleaned our house the whole day and some unexpected guests arrived. We have nothing to serve them so I just cooked the foods that are supposed to be cooked for Christmas, hehehe. I cooked chicken pandan, shanghai fried rice, and pancit canton for them. My sister made some buko salad and crema de frutta. We also have bibingka from my MIL. We were supposed to have dinner in a restaurant, but since we’re all tired, we slept early then have our exchange gifts on the next day.

Chicken Pandan

Dining in a Thai restaurant will definitely include Chicken Pandan, a piece of chicken wrapped in pandan leaves (screwpine leaves). Thai foods are typically spicy, but this dish is not. Thus, everybody can enjoy this flavorful dish.

I tried this recipe a month ago and want to do it again for the coming holidays. It’s a mouth-watering and simple recipe that you can easily follow. I looked for various recipes on-line and combined them.

Here’s my version.

Ingredients:

500 g of Chicken Thigh fillets

4 cloves of finely minced garlic

1 tsp. of finely chopped ginger

1 tsp. of cumin powder

½ tsp of garlic salt

1 tsp of ground black pepper

¼ cup of oyster sauce

1 medium pack of powdered coconut cream

2 tsp of sesame oil

12-15 pandan leaves (wash thoroughly)

3-4 c. of cooking oil for deep frying

Procedure:

1. The chicken fillets I bought were too large for serving so I have to cut it into two, about 3 x 3 inches in size. Set aside.

2. In a large bowl, combine all the ingredients except the cooking oil.

3. Put the chicken and mix it using your hands to coat the chicken with the marinade evenly. Cover with plastic cling wrap and let it sit in the fridge for at least 3 hours or for best results marinate it overnight.

4. After marinating, wrap the chicken with the pandan leaves and use toothpicks to secure it.

5. Deep fry it until golden brown. Do not over-fry it because it will harden the chicken.

6. Serve hot with sweet and sour sauce
I made two versions of this recipe, one by deep frying and the other by baking. We loved the deep fried version because it’s more flavorful and a bit crispy outside compared with the baked version, which was softer. While cooking, you can smell the pandan’s flavor and aroma. We all loved it and enjoyed our dinner. By the way, I served it with my version of Yang-Chow fried rice and it was a good combination. I’ll just post the recipe later.

I miss my blog

I miss my blog! Haaaay.  I still don’t have time to make new posts for my blog.  I have new recipes to post pa naman, sayang I don’t have time to do it right now.  I’m so tired yesterday because I stayed at the office overnight (from Tuesday morning until Wednesday night) just to finish my work. But, I still have new deadlines for today,  tomorrow, and the next day.  Naiiyak na nga ako yesterday while talking to my boss. Pretty busy talaga!

I miss Andre because I don’t have so much time to play with him. Then I still have to help my parents pack their things for their US and Canada trip.  They’ll be leaving soon, and I’ll miss them too because they’ll stay there for about 2 years. I’m so happy for them that they’ll be able to visit my sisters and our relatives in the US.  And I know they miss my sisters abroad because they haven’t seen them for years. We hope and pray that they’ll enjoy their visit in the US and Canada.

I also can’t find time to bake for my clients. I’ve so much orders pa naman. I only accepted few orders for this week.  But, there are additional orders coming that I have to turn down because I don’t really have time to do the baking.  Sayang nga ang opportunities. :(   Sana I can find time to do the baking for New Year orders.

Okay, that’s it for now. I have to finish my new deadline for today.

Too busy

I wasn’t able to update my blog lately due to my busy schedule. I’ve been busy with my work and I still have to bake lots of muffins and brownies because I have so many orders this coming week. Don’t worry as soon as I’m done with it, I’ll post na our pictures in Bohol.  I still have to post new recipes to share for this season. Okay, that’s it for now, I have to continue my work.

Christmas wish

One of my Christmas wishes this year is a laptop or a personal computer. The computer I am currently using is the computer provided by our office since my work is home-based. I am looking for a bank who could grant me a personal loan, which I can use to purchase a new computer. There are various companies that offer loans with different promos. Some offers low interest rates and I also found out that there are unsecured loans, which does not require you to have a property to use as collateral for the loan. There are also homeowners loans, which require the redistribution of financial assets over time, between the lender and the borrower and the money may be used for many purposes but the debt will be secured against property. **Sigh** I just hope that my Christmas wish would be granted if the budget permits.
