Fettucine in Alfredo Sauce

I cooked this pasta dish few weeks ago to apply what I learned from the training-seminar I attended at Nego-Skwela. On the last day of our three-day training, we cooked various menus for lunch. We cooked Korean Beef Stew, Spicy Clams, Fish Fillet in White Sauce, Bean Sprouts Salad, Yang-Chao Fried Rice, Pasta in Alfredo Sauce, and Mango Sago for dessert. Boy, it was a feast! We all enjoyed it, except for one of my classmates, who is a Mrs. Philippines-Earth candidate. She did not enjoy the lunch because she’s been taking appetite suppressants for her to be able to maintain her weight in preparation to the pageant.

Here’s my version of the Pasta in Alfredo Sauce. I baked it to melt the cheese.

You will need:

  • 1/2 cup butter
  • 100 g sweet ham, cubed
  • 100 g frozen peas
  • 100 g carrots, cubed
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 1 cup all purpose cream
  • 1 cup milk
  • 1 chicken cube
  • salt and pepper to taste
  • 1 1/2 cup quickmelt cheese, divide into two
  • 500 g pasta

Procedure:

Cook pasta according to packaging directions. I suggest to undercook it because it will be baked later on. Set aside.

Melt the butter in a cooking pan. Add the chopped ham and cook until lightly browned. Add the carrots, bell peppers, and peas. Pour in the cream and let it simmer, then add milk and half of the cheese. Sprinkle with salt and pepper Stir well.

Add the pasta to the sauce and toss well. Put in a baking dish and cover with the remaining cheese. Sprinkle chopped parsley for the added color. Bake at 350C for 15 minutes at a preheated oven.

Weekend Snapshot: Andre and friends

While I am busy blogging and browsing shoes from UGG Australia, i took this photo last Saturday when Andre is having fun with his friends in our neighborhood. They all have twist-cars in their respective colors, pink for Justine, purple for Pascal, and blue for Andre.  Andre has stickers of Cars the Movie characters all over his twist-car, Justine has Dora, and Pascal is just a plain twist-car. Another funny thing about his friends is that they have foreigner fathers, a Japanese for Justine and an Indian for Pascal, while Andre  is a full-blooded Pinoy! :D

I’m on vacation for 10 days! Woohooo!

Wohoo! It’s a holiday on Monday! Since I only report to work every Tuesday and Friday, I filed a vacation leave on Tuesday (April 7) to enjoy a longer vacation because April 9 and 10 is also a holiday in observance of the Lenten Season. Ten days of NO-WORK! Yey! I’ll return to work on April 14!

My parents and youngest sister will spend their holiday in our house so I’m thinking of a family outing for us to enjoy the holidays. They might also join Abeth’s relatives on their yearly church visitation. During these times, I miss my siblings who are now based abroad because Holy Week used to be a very busy week for us. I and my 3 siblings was once a member of a choir in our area and we were involved in church activities during the holy Week. How I wish they’re here. I’m looking forward to their homecoming and will surely arrange out of town trips and search for extended stay hotels for them to stay. I really miss them.

For now, I will prepare a menu for this week because we will all be spending most of the holidays here at home. A feast I may say. Hehe! I will prepare fish and seafood because they love seafoods. We all love seafoods most especially steamed oysters. However, I still have to finish my work due on Monday so that we can enjoy the rest of the weekend. I wish I could finish them all tomorrow.

An achievement

Last month, I have received my certificate of completion for successfully completing a 3-day livelihood training course at Nego-Skwela Livelihood & Technology Training Center located in Quezon City. It is a Business Technology & Livelihood Training course on Catering, Restaurant, and Fastfood Business Operation. I gained a lot of knowledge about the proper operation of a Canteen or Restaurant business. I love attending classes like these because I gained so much knowledge that would help me improve our food business. I have learned new ideas, techniques, and recipes.

Nego-Skwela is a NGO that offers reasonable courses like meat processing, silk-screen printing, baking, cake decorating, commercial breadmaking, reflexology, and other courses that will help you start your own business. No need to get expensive franchises of foodcart businesses because through their trainings, you will be able to learn to make your own recipes

Two years ago, I also attended a 3-day Culinary Course at the Maya Kitchen Club located in Makati City. It’s fun to meet new classmates from different walks of life. I have met novice cooks, professional cooks, balikbayans, wife of a politician, a beauty queen, senior citizens, and even owner of existing catering business and restaurants in their province.

It’s a different and new experience. Another achievement I may say. It’s more exciting to attend classes like these compared to classes during college days. :D I am more excited to attend my class and afraid to miss any of them because, aside from paying my own tuition fee (hehehe), I don’t want to miss any lessons from our professor. It’s more enjoyable to attend classes that tackles the things that interests you and the ideas that you can apply to your daily life.

And dalawang nauna ay litrato na kinunan noong kami ay nasa Bohol. Nasa likod namin ay ang Chocolate Hills. Isang napakagandang lugar na nais namin muling balikan.
